Ingredients:

1 tbsp grated orange zest
1 tbsp brown sugar
1 1/2 tsp salt
1/2 tsp ground black pepper
1/8 cayenne
1 pinch all-spice
1 pinch chili powder
1 pinch basil
4 skinless halibut fillets(about 6 oz each)
3 tbsp coconut oil

 

Preparation:

  1. Mix all except oil and fish. Blend the orange zest into the spice rub well.
  2. Coat all sides of the fish with the spice rub. Set aside.
  3. Pre-heat oven to 425 degrees
  4. Heat oil in flat bottom, stainless steel skillet.
  5. When oil is hot, add fish skin side up. Space the fish so they don’t steam each other.
  6. Sear for 2-3 minutes. Check the bottom carefully and flip when golden brown. Careful not to burn the sugar.
  7. Place pan in the oven as soon as you flip the fish. Roast until fish is cooked (5-6 min)
  8. Serve
