Ingredients:
| 1 | tbsp grated orange zest |
| 1 | tbsp brown sugar |
| 1 1/2 | tsp salt |
| 1/2 | tsp ground black pepper |
| 1/8 | cayenne |
| 1 | pinch all-spice |
| 1 | pinch chili powder |
| 1 | pinch basil |
| 4 | skinless halibut fillets(about 6 oz each) |
| 3 | tbsp coconut oil |
Preparation:
- Mix all except oil and fish. Blend the orange zest into the spice rub well.
- Coat all sides of the fish with the spice rub. Set aside.
- Pre-heat oven to 425 degrees
- Heat oil in flat bottom, stainless steel skillet.
- When oil is hot, add fish skin side up. Space the fish so they don’t steam each other.
- Sear for 2-3 minutes. Check the bottom carefully and flip when golden brown. Careful not to burn the sugar.
- Place pan in the oven as soon as you flip the fish. Roast until fish is cooked (5-6 min)
- Serve
