Ingredients:
| 1 | lb shrimp |
| 1 | bunch asparagus |
| 1 | tbsp ginger |
| 2 | tbsp tamari |
| 1 | pint cherry tomatoes |
| 1 | clove garlic |
| 1 | tbsp apple cider vinegar |
| 1 | tbsp olive oil |
Preparation:
- Heat oil in fry pan or wok on medium heat
- Add garlic (1-2 minutes)
- Add asparagus. Cook until vegetables begin to go soft.
- Add cherry tomatoes. Cook 2-3 min.
- Add shrimp. Cook until shrimp are white.
- Add tamari, vinegar and ginger. Simmer for 2-3 min
- Add cooked rice. Mix until rice has taken on some of the tamari colour.
- Serve
