Ingredients:

1 lb shrimp
1 bunch asparagus
1 tbsp ginger
2 tbsp tamari
1 pint cherry tomatoes
1 clove garlic
1 tbsp apple cider vinegar
1 tbsp olive oil

 

Preparation:

  1. Heat oil in fry pan or wok on medium heat
  2. Add garlic (1-2 minutes)
  3. Add asparagus. Cook until vegetables begin to go soft.
  4. Add cherry tomatoes. Cook 2-3 min.
  5. Add shrimp. Cook until shrimp are white.
  6. Add tamari, vinegar and ginger. Simmer for 2-3 min
  7. Add cooked rice. Mix until rice has taken on some of the tamari colour.
  8. Serve
